Sweet Potato Cheesecake
Red Mountain, The Adventure Spa

Ingredients:

  • 1 ¼ cups graham cracker crumbs
  • 2 ½ tablespoons water
  • 18 oz. Low fat cream cheese
  • 1 ¼ cups fructose
  • 2 teaspoons cinnamon
  • 6 gelatin sheets
  • 4 cups sweet potato puree
  • ¼ cup skim milk

Procedure:

  1. Combine the graham cracker and water. Press into a 10 inch cake pan and set aside.
  2. In a mixer cream the cheese and fructose together. Fold in the sweet potato.
  3. Soften the gelatin in a bowl of cold water. Warm the skim milk. Discard the water and pat the gelatin dry. Add to the skim milk.
  4. Quickly fold the milk into the cheese mixture.
  5. Pour into the cake pan and refrigerate overnight.

Yield: 10 inch cake, 16 Servings, Serving Size: 2 oz.
