Sweet Potato Cheesecake

Ingredients:
- 1 ¼ cups graham cracker crumbs
- 2 ½ tablespoons water
- 18 oz. Low fat cream cheese
- 1 ¼ cups fructose
- 2 teaspoons cinnamon
- 6 gelatin sheets
- 4 cups sweet potato puree
- ¼ cup skim milk
Procedure:
- Combine the graham cracker and water.
Press into a 10 inch cake pan and set aside.
- In a mixer cream the cheese and fructose
together. Fold in the sweet potato.
- Soften the gelatin in a bowl of cold
water. Warm the skim milk. Discard the water and pat the gelatin dry.
Add to the skim milk.
- Quickly fold the milk into the cheese
mixture.
- Pour into the cake pan and refrigerate
overnight.
Yield: 10 inch cake, 16 Servings, Serving
