  • 1/3 cup diced potatoes
  • 4 ounces sea bass, butterflied
  • 1 roma tomato, sliced
  • 1 teaspoon lemon juice
  • 1 teaspoon low-sodium soy sauce
  • 1 tablespoon sliced scallions
  • 1/2 cup broccoli florets
  1. Place potatoes in a microwave safe dish, cover and cook on high for 2 minutes.
  2. Layer remaining ingredients, in order, on top of potatoes.
  3. Cover and cook on high in microwave for approximately 3 minutes or until fish flakes easily with a fork and potatoes are tender.

Makes 1 serving, containing approximately: 210 calories, 14 gm. Carbohydrate, 3 gm. Fat, 60 mg. Cholesterol, 30 gm. Protein, 351 mg. Sodium, 3 gm. fiber
