Red Mountain Spa 2 C Non Fat Milk 1 T Vanilla Bean Pulp 2/3 C Fructose 2 T Granulated Gelatin 32 Oz Plain, Non Fat Yogurt 1/2 C Prickly Pear Cactus Fruit Puree* Juice And Zest Of 1 Lemon Yield: 12 Servings Serving Size: Slightly Over 1/2 Cup 1. Combine milk, fructose, vanilla, and gelatin. 2. Heat to dissolve gelatin completely. 3. Remove from heat and cool. Stir in yogurt, lemon juice and zest. 4. Cool to nearly set, and marble in prickly pear puree. *Prickly Pears are the fruit of a cactus indigenous to the high deserts of the southwest. The fruit is available in the late summer and throughout fall, and both a puree and a syrup can be found in specialty supermarkets. While the characteristic flavor of prickly pear cannot be duplicated, strained berry purees are excellent substitutes.
