Pumpkin and Apple Coffeecake

- 1 cup flour, whole-grain wheat
- 1 cup flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 tablespoon cinnamon
- 1/2 teaspoon ginger
- 1/4 teaspoon allspice
- 1/4 teaspoon clove
- 1 cup pumpkin
- 1/4 cup egg beaters¨ 99%
egg substitute
- 1 ounce canola oil
- 1 cup buttermilk
- 1/4 cup honey
- 8 tablespoons coffeecake topping --

- 8 oz apple slices, peeled
Preparation
Method

- Mix, sift all dry ingredients together
in a bowl.
- Mix all liquid ingredients in a
separate, large bowl.
- Mix the pumpkin with the liquid
ingredients.
- Sprinkle the drys onto the wets and fold
in until just mixed; try not to over mix.
- Pour the batter into a pan sprayed with
pan coat.
- Arrange the sliced apples on top of the
batter, and sprinkle the topping on top of the apples.
- Bake at 400 degrees for 30-35 minutes or
until it tests done.
