Lavender Almond Cookie

1 Cup Almonds
1 Cup Sugar
1 Cup All-purpose flour
1 Teaspoon Rose Water
1 Teaspoon Culinary lavender flowers
3 Egg White

*Preheat oven to 325F
*Food-process almonds and lavender until finely ground
*Add sugar and flour. Process until well mixed
*Add rose water and egg whites. Process until well blended (dough will be very sticky).
*Lightly coat cookie sheets with cooking spray.
*Drop dough by teaspoonfuls onto the cookie sheet.
*Bake at 325F for 30 mins. or until lightly browned and crisp.
*Cool on wire racks.

Serves 30. For a softer cookie, reduce baking time to 25 minutes or less
(check at 20 minutes).
