Maple Pear Cake New Age Health Spa (New York) 108 calories per serving ¼ C. maple syrup 3 pears, peeled and small diced 1 C. whole wheat pastry flour ¾ tsp. Baking powder ¼ tsp. Baking soda 1 tsp. Ground cinnamon ½ tsp. Ground nutmeg ¼ tsp. Sea salt 1/3 C. organic cane sugar 2 tbs. Corn oil 2 tbs. Applesauce, unsweetened 1 tsp. Vanilla extract 2 eggs ½ C. skim milk cooking spray Preheat oven to 350 degrees. In a small saucepan, bring the maple syrup to a boil. Add pears and once again bring to a boil. Set aside. Combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a medium size bowl. In a separate bowl, whisk together sugar, corn oil, applesauce, vanilla, eggs, and milk. Stir into flour mixture, mixing only until incorporated. Coat a loaf pan or an 8x8-inch pan with cooking spray. Pour half the batter into the prepared pan.
