Orange Cranberry Cookies

Cooking spray
½ cup organic cane sugar
½ cup sucanat or brown sugar
¼ cup corn oil
1 egg
3 tbsp. fresh squeezed orange juice
1 tsp. grated orange peel
1 cup all purpose flour
¾ cup whole-wheat pastry flour
½ tsp. baking powder
¼ tsp. baking soda
¼ tsp. salt
1 cup dried cranberries


1. Preheat oven to 375 degrees. Spray baking sheets with cooking spray or line with parchment paper.
2. In a medium bowl, combine sugars and oil. Add the egg, orange juice and orange peel.
3. Sift together the all purpose flour, whole wheat pastry flour, baking powder, baking soda and salt. Add to orange mixture and mix until dry ingredients are incorporated. Stir in the dried cranberries.
4. Drop dough in spoonfuls onto prepared baking sheet. Bake 7-10 minutes or until edges are golden brown. Cool for a few minutes on the baking sheet before moving to a wire rack to finish cooling.
