Cooking Spray 1 Cup All Purpose Flour ¾ Cup Whole Wheat Flour 2 Cups Rolled Oats 1 Cup Sucanat 1/3 Cup Corn Oil 1/3 Cup Butter, cut into small pieces 1.5 Tsps Vanilla Extract 1.5 Cups Apricot Preserves 1. Preheat oven to 350 degrees. Spray 13x9 inch pan with cooking spray. 2. Combine Flours, rolled oats, sucanat, corn oil, butter and vanilla in a food processor. 3. Pulse until mixture resembles coarse meal. Press half of mixture into prepared pan. 4. Evenly distribute the apricot preserves over oat mixture. Top with remaining oat mixture and gently press. 5. Bake for 25-30 minutes or until bubbly and golden brown. Bars will firm up as they cool. Cut into 32 bars and serve.
