Chocolate Espresso Cake

Yields 16 servings, 118 calories per serving – a low calorie desert for your New Year’s resolution plans!

7 ounces tofu, soft
1 cup honey
1 tsp. vanilla extract
1 tbsp. coffee extract, or espresso
1/3 cup fat free milk (or soy milk)
1 cup natural cocoa powder
˝ cup whole wheat pastry flour
1 tbsp. baking powder
1 tsp. baking soda

1. Mix together tofu, honey and vanilla in food processor
2. Add coffee flavor, milk and cocoa
3. Sift together flour, baking powder and soda
4. Add to tofu mixture and mix until smooth, be careful not to overmix.
5. Immediately bake at 350 degrees for about 25 minutes, or until toothpick inserted in center comes out clean.
