Lemon Tapioca Parfait
(From "The
Hills Health Ranch" kitchen)
- 2-3/4 cup milk
- 3 tbsp. quick-cooking tapioca
- 5 tbsp. Splenda (sweetener)
- 1 egg white
- 1 tsp. vanilla
- ½ tsp. lemon extract
- 1 pinch ground nutmeg
- 1 tbsp. lemon zest
- ¾ cup low fat granola
- ¼ cup kiwi fruit
- ¼ cup strawberries
- Mix milk, tapioca, Splenda, egg white, vanilla, lemon extract, nutmeg
and zest in a saucepan and let sit for 5 minutes.
- Cook over medium heat stirring constantly until mixture comes to a full
boil.
- Remove from heat and let stand until almost
set up but still pourable.
- Layer in 4 wine glasses, starting with about 4 tablespoons of pudding
then 1½ tablespoons of granola and 1 tablespoon of fruit.
- Add one more pudding layer then top with another granola and
another fruit layer.
Serves 4; per serving: 168.2 Cal., 1.3 Grams fat
