| Salmon and Soba Noodle Salad Lake Austin Spa Resort ½ cup hoisin 2 teaspoons roasted sesame oil ½ cup rice wine ¼ cup light soy sauce 2 tablespoons brown sugar ¼ cup tomato puree 4 cloves garlic, minced 2 tablespoons peeled, minced garlic 1 teaspoon Spiracha or Asian chile paste 1 twelve-ounce package buckwheat soba, cooked 2 red bell peppers, roasted, peeled, seeded, sliced 1 bunch green onions, sliced thinly 1 ½ cups carrot, grated 1 cup water chestnuts, julienned 2 cups cooked (shelled) edamame (soy beans) ¼ cup cilantro, chopped 2 tablespoons toasted sesame seeds 1 pound skinless Salmon filets salt, pepper Combine the first 9 ingredients in a large bowl. Add the soba noodles. Season the salmon with salt and pepper. Charcoal grill. Cook, then flake and add the noodle mixture along with the remaining ingredients. Chill. Serves 6
