The Hills Health Ranch Herbed Tofu & Vegetable Sauté 2 cups chopped onion 4 cloves garlic, coarsely chopped 1 Tbsp. olive oil 3/4 tsp. sea salt 3 cups broccoli flowerets cut into 1 1/2" pieces 1 cup bok choy, chopped 10 mushrooms 1/2 Ib. silken, low-fat, firm tofu cut into 1/2" cubes 1 red bell pepper, coarsely chopped 2 Tbsp. fresh basil, minced 1/4 tsp. dried thyme 1 pinch black pepper (to taste) 2 Tbsp. Braggs Amino Acids Small amount of grated cheddar cheese, optional In a large, deep skillet, saute onions and half the garlic in olive oil with salt for about 5 minutes, over medium heat, stirring frequently. Add broccoli, bok choy and mushrooms and saute about 5 minutes more, until the green of the broccoli deepens. Add tofu, bell pepper, herbs and black pepper. Keep cooking another 8 to 10 minutes or until everything is tender. During the last 2 minutes or so of cooking time, add the Braggs and the remaining garlic. If you desire, sprinkle a little grated cheddar cheese at the end and stir until it melts. Serves 6: Per serving: 95.5 calories, 3.1 grams fat
