Sweet Potato Salad
The Heartland Spa (Illinois)
2 pounds sweet potatoes, peeled and cut into 1 inch cubes
1/3 cup extra-virgin olive oil
2 tablespoons fresh lime juice
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 cup finely chopped fresh cilantro leaves
1/2 medium-size red bell pepper, seeded and cut into 1/4 inch dice
4 scallions, white and light green section, finely chopped
salt and pepper to taste
Place sweet potatoes onto a roasting pan with a light coat of cooking spray,
roast for one hour at 375 degrees. Whisk together the olive oil, lime juice,
chili powder, cumin and cilantro in a small bowl. Add red pepper and
sacallions along with the roasted potatoes and toss with dressing. Salt and
pepper to taste. Serve warm.
