Brownies To Live For
The
Oaks at Ojai Health Spa and Resort Hotel

Much lighter than most brownies and delicious too!
Ingredients:
- 2 ounces BAKING chocolate, melted and
cooled
- 6 tablespoons Butter Buds
- 1 teaspoon vanilla
- 1/2 cup prunes, pitted and pureed
- 1/2 cup honey
- 3 whole egg whites, whipped to soft
peaks
- 1/4 cup sugar, whipped with egg whites
- 1/2 cup whole wheat flour, sifted with
baking powder
- 1/2 teaspoon baking powder
- 1/4 cup walnuts, chopped
Preparation:
Set oven at 325 and spray an 8"
square pan with nonstick spray. Or use a 9" pan for a 2"
brownie.
For Prune Purée:
- Combine prunes with 4 tablespoons of
water and process in food processor (or buy baby prunes) and set aside.
- Combine cocoa, honey, vanilla, prune
purée, butter buds and melted chocolate.
- Whip egg whites and sugar to soft peaks
and gently fold chocolate mixture.
- Fold flour mixture into batter and
spread evenly in pan.
- Sprinkle with nuts and bake for 30
minutes until done.
- Cool and cut into 1 1/2" or
2" squares.
Serving Ideas: Combine with fresh fruit or
dessert plate with yogurt and raspberry purée with fresh raspberries and
blueberries.
