Black Bean Vegetable
Wrap
The Hills Health Ranch
- Vegetable spray
- 2 cloves garlic, minced
- 1 cup red pepper, diced
- 1 cup yellow pepper, diced
- 1 cup zucchini, diced
- 1 cup mushrooms, sliced
- 1 red onion, diced
- 1 7/8 cups black beans, cooked
- 2tsp. Cumin
- ½ cup Monterey Jack cheese, grated
- 4 whole wheat tortilla shells,
9-10"
- Heat vegetable spray in pan over medium
heat. Add garlic and stir 30 seconds, add remaining vegetables.
- Place black beans and cumin in large
bowl, mash slightly with fork. Mix into vegetables & sauté until
tender, 5 to 7 minutes. Sprinkle cheese and cilantro on whole wheat
tortilla.
- Spoon ¼ of filling down the center of
tortilla.
- Roll up tortillas enclosing filling.
Arrange wraps seam side down on baking sheet.
- Cover with foil and bake until fillings
are heated through, uncover to brown. Cut in half to serve.
