Baked Apples in Phyllo Pastry with Papaya Sauce

  • 4 cored golden delicious apples
  • 4 tsp. dried cranberries
  • 4 tsp. honey
  • 1/2 tsp. ground cinnamon
  • 1/2 cup unsweetend apple juice
  • 1 papaya, peeled, seeded and chopped
  • 1 tsp. lime juice
  • 1 tsp. candied ginger root, minced
  • 4 sprigs fresh mint
  • 4 phyllo dough sheets
  • Fresh seasonal berries.
  1. Pre-heat oven to 350ºF
  2. Put dried cranberries into cored apples and set aside
  3. Spray one sheet of phyllo with vegetable oil spray and cut in half horizontally, lay one half over the other forming a cross.
  4. Place apple in the centre of the cross, sprinkle with cinnamon and drizzle with 1 tsp. of honey.
  5. Fold phyllo up over the top of the apple, completely enclosing apple.
  6. Spray with vegetable spray and repeat with remaining apples.
  7. Bake for 30 - 40 min. until apples are soft when poked with a knife.
  8. To make the sauce, combine papaya, juices, and candied ginger in blender and purée until smooth. Add more apple juice if needed.

To serve: Spoon sauce on plate and set phyllo-covered apple on sauce.
Garnish with mint sprigs and cranberries.
